We love showcasing local distilleries in our tasting room, so this Saturday you can taste Peach Street Distillers from Palisade, Colorado!

Peach Street Distillers boasts of being “artisan experimenters” and “fearless craftsmen” located in a “secluded mecca perfect for growing the finest fruits and grains on the planet.” These artisans take pride in their ingredients being local, meaning “their stuff gets carted over each morning on a forklift.” The three owners pride themselves by being hands on in the development process of tinkering, tasting, concocting, tasting and pushing themselves to create the most inspired and impressive spirits imaginable.

You can sample the following and take a bottle or 2 home for the upcoming cold winter nights!

COLORADO STRAIGHT BOURBON - Colorado's first legal Bourbon! Aged a minimum of 3 years to develop rich flavors of caramel, vanilla, and a subtle spiciness.

5 YEAR BOURBON - Our classic Colorado Straight Bourbon aged 5+ years and bottled from a single barrel, hand selected by our distillers for its unique character.

SKA MODUS HOPERANDI HOP FLAVORED WHISKEY - Hopped Whiskey??? We take Colorado's classic west coast IPA, Modus Hoperandi, and run it through our Christian Carl pot still, then age it in second use Bourbon barrels. Think of Whiskey and Gin having a love child.

COLORADO STRAIGHT RYE WHISKEY - Aged a minimum of 2 and a half years, our newest addition to the family features all malted and unmalted Rye from the San Luis valley.

AMERICAN PEATED SINGLE MALT WHISKEY - Our Peated Single Malt is wonderfully complex layering the rich flavor of an all Barley mash and the smokey notes of Peat. Scotch fans, we got you covered.

Sagamore Spirit, Maryland’s first distillery since prohibition, is best known for their popular rye whiskey. So when they introduced their own ready-to-drink canned cocktail line, it was a natural extension of the Sagamore Spirit brand, which is all about celebrating life’s simple pleasures. Independently owned by one family in Newport, Kentucky, New Riff Distilling has used that independence, and freedom from outside pressures and interests to make an unforeseen declaration for quality: for perhaps the first time since the inception of the Bottled in Bond Act in 1897, a Kentucky sour mash whiskey distillery has committed themselves exclusively to that quality standard, the world’s highest. Join us this Saturday to taste the official wines inspired from the HBO drama series “House of the Dragon”. Whether your hosting a viewing party or binge watching the entire season, their Cabernet Sauvignon, Pinot Noir, and Red Blend will complete your experience.

If there was a wine King, their Cabernet Sauvignon would take the crown. Dense, rich and jammy with scents of cherry tobacco and vanilla crème and a long, mouth coating finish with hints of sweetness.

Their Pinot Noir is sometimes called the Heartbreak Grape. It is enticing on the nose with lovely aromatics, including tart red cherry and cranberry, followed by subtle earthy and savory notes. The palate is medium bodied with silky textures and delicious bright red fruit that shows just a bit darker in profile than the nose. This gem is garnet in color and lingers with a long, fruit filled finish.

 Rounding out the collection, is their Red Blend. A blend of the classics—52% Cabernet Sauvignon, 20% Petit Verdot and 8% Malbec—punctuated by 20% Zinfandel. Velvety and dark in color with aromas of cocoa, cranberry and black currant. Rich maple, dark red fruit, toffee and creamy caramel coat the palate and add to the balanced and juicy mouthfeel. Finishes with layers of dark berries and coffee.

Found­ed by Niels and Bim­mer Udsen in 1983, Cas­toro Cel­lars is one of the old­est winer­ies in the Paso Rob­les area. Over the past 35 years, Cas­toro has been a pio­neer for organ­ic and sus­tain­able farm­ing on the Cen­tral Coast.

Cas­toro Cel­lars grapes are exclu­sive­ly from their Estate Grown, organ­ic and sus­tain­ably farmed vine­yards. All of their fruit comes from with­in the Paso Rob­les AVA where grape vari­ety is care­ful­ly matched with vine­yard loca­tion and farm­ing tech­nique in order to pro­duce the desired char­ac­ter­is­tics of each varietal. They strongly believe you can taste the difference in their wines from mass produced vineyards.

With the weather turning colder, warm your spirits with samples from Woody Creek Distillers. This Saturday we will taste their Summer Gin, Bourbon, Cask Bourbon, Rye, and High Rye Bourbon.

Located 15 miles west of Aspen in Basalt, Colorado, Woody Creek Distillers pours everything they are into everything they make. They set out to make nothing but the finest craft spirits, each with a unique taste and character that was true to the origins of that spirit. It’s a standard they hold ourselves to every day. They never use neutral grain spirits or blend with base spirits from other distillers. They grow and harvest many of their own ingredients, like the Rio Grande potatoes for their premium vodka. They only source their grains from trusted Colorado farms, like the rye in their 100% rye mash whiskey. For the finishing touch, they distill every spirit they make in their own custom CARL stills – a shining copper example of engineering and art that turns the Earth’s freshest ingredients into the world’s most treasured spirits.

Founded in Portland, Level Beer, is all about balance. Balanced life, balanced partnership, balanced beer. Their branding concept has been equally inspired, merging popular themes not often seen in craft beer into both the labeling and naming of their beers. Level is focused on pale ales and farmhouses, while also producing sours and IPAs, among other styles. But it keeps its beers lower in alcohol, especially during non-winter months.

By just producing six varieties they are able to give more attention to details, thus achieving consistency and predictability with each release.

Holidaily Brewing Company is the passion project of Karen Hertz, a craft beer enthusiast and lover of living life to the fullest. Karen survived melanoma and thyroid cancer in her early 30’s, leading to a treatment plan including a gluten-free diet. Along with beating cancer came the desire to focus on health, happiness and a commitment to celebrate life every single day.

As a beer lover, going gluten-free meant only drinking gluten-free beer or not partaking in social activities in the same way her friends and family could. The lack of good tasting, gluten-free options was a challenge for Karen – one that she was driven to overcome. Years of taste-testing, research on gluten-free ingredients and an understanding of processes other brewing companies utilized led her to believe there was a better way.

And so, the idea of Holidaily Brewing Company was born: a company dedicated to creating excellent tasting gluten-free beer.

Brewery Rickoli

Brewmaster, Rick Abitbol, has been professionally brewing award-winning beers along the Front Range for over a decade. Rick is respectful of beer styles and traditional brewing technique, however, he has long been an innovator of style and not afraid to color outside the lines. He was one of the first brewers to explore the Black IPA, which has become a mainstay in breweries and competitions alike.

They love their hops over at Rickoli! That’s not to say you won’t find any wonderfully malty creations from these guys because there are many, but what you will notice is the wide variety of hoppy selections. And always be on the lookout for their newest creations.

In addition to brewing some mighty tasty beers, Rickoli also removes the gluten from all of their brews. They believe in making great craft beer more accessible to everyone, so they use an enzyme to reduce the gluten in every beer to under 10 parts per million.

Diebolt Brewing

The Diebolt Family has a rich history of fermentation from their distant cousins making Champagne in France, Dan’s Father pressing grapes in his garage, Dan’s early homebrewing days in Oklahoma, and finally Jack taking up the homebrewing torch here in Colorado over a decade ago.

All this brewing history culminated during the summer of 2013 with the opening of Diebolt Brewing Company in the up-and-coming North Denver neighborhood of Sunnyside. While initially focused on exploring their French ancestry and heritage through beer styles such their French Saison, they have continued to adjust as the desire and popularity for new and unique styles shift throughout the years, now brewing a wide variety of IPAs, Dark and Light Lagers, Fruited Sours, Barrel Aged Stouts, historical beers, and a never-ending supply of experimental offerings.

Diebolt’s passion is palpable, their creativity inspiring, and their dedication and hard work is evident in everything they do and every beer they brew.

Joel Gott is a fourth-generation California vintner, and wine and food entrepreneur. Born in Napa Valley and raised in the Sierra Foothills where his parents started Montevina Winery. Sarah grew up in Marin County and, later, in Knights Valley, a stretch of farmland and vineyards linking Napa Valley with Alexander Valley in northern Sonoma County. It was in Knights Valley that she first gained an appreciation of wine that led her study in the University of California at Davis’ Viticulture and Enology Department, where she graduated in 1993 before going on to work for esteemed Napa Valley wineries such as Joseph Phelps and Quintessa.

Since starting Joel Gott Wines in 1996, Joel and Sarah have selected the best fruit from growing regions in California, Oregon and Washington which they blend to create more balanced, clean, complex, and elegant wines. They are geared towards continuing to give customers expressive and food-friendly wines at great prices.

Myers built his original still from copper photogravure plates that he had once used to create enduring photographic scenes, from western landscapes to the Chrysler Building. 291 Colorado Whiskey is “Hardmade the Colorado Way”. Today (and since day one), Distillery 291 is distilling, from grain, to barrel, to bottle, by hand, from scratch, ten distinctive Colorado whiskeys. Utilizing grains from the Colorado plains and water collected from Pikes Peak reservoirs, Myers turned his artist’s eye towards whiskey and hasn’t looked back. Everything matters.

It all started with a humble homebrew kit and the drive to make better beer. Tired of the same bland and dated choices everywhere, Air Force friends Eric Wallace and Dick Doore set out to make the kind of beer that excited them; beer they wanted to drink. A hobby quickly became an obsession and it wasn't long before Left Hand Brewing was born in Longmont, Colorado. Over 26 years later, they're still forging their own path, building community around better beer.

When everyone was adding concentrates to wheat beer, Left Hand decided to hand-juice ginger for Good Juju. When told that American nitro beer couldn't be bottled, they invented it. When they saw a need for better disaster relief at home, they started the Left Hand Brewing Foundation.

At Left Hand, they overcome and they raise the bar. They adapt and get even better. Through it all, they've always been proud of what they stamp that iconic left hand of approval on. They're not guided by what anybody else is doing. They lead by being damn good people who deliver damn good beer from their left hand to yours.

Bill Foss bought a large agave farm in the year 2002. Initially, the plan was to simply farm agave. The first crop was mature and ready to harvest in 2008, but there was virtually no market for the crop due to the recession in the US, which had a tremendous effect on the country of Mexico. Rather than allowing the plants to die Bill decided to make tequila.... This is where Suavecito's story begins.

After years of research, and working with industry experts, the Suavecito formula created an exceptionally smooth spirit that will change the way you think about and drink tequila, with it's bold and unique take on the tequila tradition.

Leslie and Steve Kaczeus both left the high-tech industry to follow their dream of creating an adventurous craft brewery dedicated to producing a wide range of high quality ales and lagers. Steve is a Mechanical Engineer and Program Manager by training and was an avid home brewer for many years. He graduated from the American Brewer’s Guild in the summer of 2011. Leslie’s background is in marketing.

Their goal is simple – they want to make really great beer and have a lot of fun. They also love to rock out and their beer enjoys the best classic rock 24 hours a day which is why it’s so happy and delicious! They even have music pairings for all their beers!

Eric and Austin have been friends since attending the same middle school in their home state of Arizona. Eric was first to escape the heat of the desert and seek out more diverse weather. Austin visited Eric in Denver frequently, and one particular visit to celebrate a friend’s wedding resulted in a brewery tour, which ended at Golden Moon Speak, planting the seed that would one day grow into Ballmer Peak Distillery.

After a spirited conversation in 2014, surrounded by the crisp mountain air of Denver, Colorado, Austin and Eric had their first whiskey fueled conversation which led to the founding of Ballmer Peak Distillery which opened five years later in November of 2019. A sustainability driven, pandemic-survived, nano-distillery with a cozy tasting room nestled against Green Mountain in Lakewood, Colorado, Ballmer Peak Distillery offers a unique lineup of small batch spirits and cocktails with globally inspired flavors, and seasonal micro-batch experiments. Eric and Austin hope to motivate, inspire and fuel the passions and creativity of others by sharing their delicious, quality creations with their community and the world.
